Early for me when it comes to how amazing fried rice could be. Theirs was always perfectly al dente with slightly crispy edges, full of rich savory flavors and loaded with extra vegetables, eggs and some protein sounded good.
When our favorite restaurant sadly closed over a decade ago, I spent years tinkering with dozens and dozens of batches of fried rice, trying to recreate a fried recipe that tasted as good as theirs. And while nothing will ever match the original in my book, this fried rice recipe I came up with is as close as I’ve come, and it’s been my favorite ever since. It’s surprisingly quick to make, easy to customize with your favorite toppings, and SO delicious and comforting. Thousands of our readers have done it too and enjoy it over the years. Ok, let’s get to it. Here are the key things I’ve learned over the years about making the best fried rice.
1) Use cold rice: You need to plan ahead and use properly cooled cooked rice. A fresh batch of hot (or even lukewarm) rice doesn’t cook well when it hits a hot pan, resulting in soggy and sticky clumps – not good. So rice in the fridge is ideal! Or if you
