How To Make Healthy Dark Chocolate

Making a good homemade chocolate bar should start with good chocolate, because it’s really all about the chocolate. I used Cacao Barry Alunga milk chocolate, which many call dark chocolate lovers’ milk chocolate. It’s creamy and chocolatey, but not too sweet. It melts beautifully and sets beautifully without tempering the chocolate. You can buy 1 kg bags at some IGA stores in Quebec, or you can order online from Vanilla Food Co. and have them delivered to your door. If you want to make milk chocolate bars at home, use milk chocolate, but if you want to make dark chocolate bars, definitely use dark chocolate. Again, choose high-quality chocolate to make chocolate bars at home.

Apart from chocolate, another thing to make chocolate bars at home is a mold. I used two types of molds: Lékué’s 9-inch silicone mini cake pan ( this one on Amazon ), which requires no preparation, and a set of four mini cake pans ( this one on Amazon ), which require greasing. To make sure the chocolate bars are properly landed. Honestly, if you can find a silicone pan or candy mold, I would use that. Silicone makes the perfect mold for making chocolate because it requires zero prep (no greasing pans or anything) and makes the entire process stress-free (and, I guess, silly). trust me You can pop a chocolate bar directly from the mold without any struggle.

My favorite chocolate bars are Puffed Rice (Rice Krispies) and Salty-Sweet. So for this chocolate bar recipe I used part puffed rice, part puffed quinoa and some pretzels to get that super satisfying salty sweet taste that everyone loves. I’ve also made several recipes with coconut, both grated and flattened, because that’s what my brother loves and cares to share! I also sprinkled some coconut chocolate bars with the matcha, which adds a light tea flavor that balances out the sweetness of the milk chocolate bars. In fact, you can make this with your favorite caramel filling. Be creative!

You can use this chocolate bar recipe to make chocolate bars at home. Simply line a baking sheet rimmed with parchment, then pour melted chocolate over the parchment and spread as thin or thick as you like. Then sprinkle generously with your favorite toppings. Place the pan in the fridge to set. Then when the chocolate shell is hard, you can break it into pieces. Remember to refrigerate the chocolate shell.
